Slice your chicken breasts thin. This should create about 9-10 chicken tender pieces.
Set up 3 dishes. One for the flour, one for the 2 eggs (whisked), and one for the pretzel mixture.
Dip your chicken piece into flour and completely coat it on both sides.
Dip that same chicken piece into the eggs. Completely coat it on both sides.
Dip that same chicken piece into the pretzel mixture. Make sure it's completely coated, using your hands to press the pretzel mixture into the chicken. Set aside and repeat with all of your chicken pieces.
Heat your canola in a pan over low/medium to around 325° F. If you don't have an oil thermometer, that's fine! Just heat the oil in between low and medium for about 5-10 minutes before you begin cooking.
Put your burner on low and add your chicken pieces to the oil. Make sure there is a slight sizzle on the oil surrounding your chicken but not too much, it's important not to burn the pretzel pieces! Cook for 4 minutes on each side. You may need to do this in 3 or 4 batches depending on how big your pan is!
Serve with dipping sauces.
