Preheat oven to 350℉. Line a baking sheet with parchment paper.
Cream together the butter, 1 cup of white sugar, and brown sugar.
Add in the eggs, vanilla, and 1 cup of the peanut butter. Combine.
Add the flour, baking powder, and sea salt. Combine.
Using a ½ cup measuring cup, divide the dough into 12 cookies.
Roll the cookie dough into a ball, and using your thumb, create a little pocket in the middle, as if you're making thumbprint cookies.
Spoon about 1 tsp of peanut butter into the pockets that you've created in the cookies. Close the cookie dough around the peanut butter and roll into a ball.
Add ½ cup white sugar to a bowl. Press the dough balls slightly so that they resemble a disc. Press the cookie discs into the sugar. Place the cookies onto the baking sheet.
Bake for 17-19 minutes. Until the edges are golden brown.
While the cookies are baking, add the remaining ½ cup of peanut butter to a Ziploc bag. Run it under warm water so it starts to loosen up.
Once the cookies have finished baking, Snip the corner of your Ziploc bag, and drizzle the melty peanut butter over top.
Top the cookies with the peanut brittle.
