Vodka Sauce

This is the pasta standard. Everybody has their very own version of vodka sauce and this is mine. I’ve honestly never had a bad one, so you can’t go wrong with a recipe from any chef! But, I’ve been asked for my version of it a ton so I thought I’d share it with you guys. This is a fan favorite. It’s easy and so incredible. After those long days, this is usually my go-to because I can get it done in 10 minutes and it tastes like I’ve been working on it all day. Enjoy it on noodles, chicken, shrimp, whatever you want! I hope you’ll enjoy it.

Vodka Sauce

My version of the fan favorite, vodka sauce.
Cook Time 15 minutes

Ingredients
  

  • ¼ cup olive oil
  • 4 cloves garlic minced
  • 1 6 oz. can tomato paste
  • ¼ cup vodka
  • 1 cup heavy cream
  • 1 T red pepper flakes
  • 1 T parsley flakes
  • ¼ t salt
  • ¼ t pepper
  • 2 T butter
  • ½ cup pasta water This is only if you're making this with pasta noodles. This ingredient is okay being omitted! If the sauce is too thick, you can just add some normal tap water.

Instructions
 

  • Heat the oil in a pan over medium heat and add the garlic. Cook until lightly golden, about 1-2 minutes.
  • Add the tomato paste and fully combine it with olive oil and garlic. Let it cook and caramelize for about 2 minutes.
  • Add the vodka and let it cook off for about 3-4 minutes.
  • Stir in the cream, red pepper flakes, parsley, salt, and pepper.
  • Stir in the butter.
  • Add the pasta water. Start with ½ cup and add more as needed. Give it that smooth, glossy finish! If you're not using it, skip this step.
