Tortellini Pasta Salad

If you’re like me, and only have 10 minutes to do anything then this pasta salad is for you. One of my favorite thing about pasta salads is their ease. I used a minimal amount of ingredients, and pre-made ones at that, to make this pasta salad because I wanted to put out something that was easy and could be made in large. This pasta salad is perfect for hosting or for making and eating throughout the week. I could eat pasta salad every. single. day. and honestly? I probably will. You should try it, too.

Tortellini Pasta Salad

An easy, light pasta salad that can be made quickly and in mass. It's herby, fresh, peppered with vegetables, and will have everyone coming back for seconds.
Prep Time 20 minutes

Ingredients
  

Roasted Tomatoes

  • 1 10 oz. package cherry tomatoes
  • olive oil
  • salt
  • pepper

Pasta Salad

  • 1 lb. tortellini
  • 2 cups pesto
  • 1 15 oz. can of peas
  • 2 cups arugula
  • 1 cup mozzarella cheese balls cut in quarters
  • roasted tomatoes (see above)

Instructions
 

Roasted Tomatoes

  • Preheat the oven to 400°F.
  • Lay out the cherry tomatoes on a baking sheet.
  • Drizzle with olive oil.
  • Season with salt and pepper.
  • Bake for 25 minutes.

Pasta Salad

  • Cook and drain your tortellini.
  • Combine the tortellini, pesto, peas, arugula, mozzarella, and roasted tomatoes.
  • Chill.
