Taco Bell Chalupa Copycat

I know it’s so easy to just drive to the nearest Taco Bell and spend the $1 it costs to buy yourself a Chalupa, but hear me out, cooking is fun and you know the exact non-processed ingredients that are going into it if you use this recipe. One of my favorite things about copycat recipes is that I know exactly what is being used to cook the food. You’d be surprised by some of the insane things that restaurants put in their foods to make their food taste the way it does. You can even prep these shells and meat and eat them throughout the week! And let me emphasize again, cooking is fun! And you don’t even have to leave your house for this. I’ll hold for applause.

  • 1 lb. ground beef
  • ½ cup tomato sauce

  • ¼ t pepper
  • ¼ t oregano
  • ¼ t paprika
  • ¼ t onion powder
  • ¼ t garlic powder
  • ¼ t chili powder
  • 1 T parsley flakes

Other

  • canola oil
  • whatever taco toppings you want

Instructions

Chalupa Shells

  • Combine the flour, baking powder, salt, and butter. You can do this by hand or in a stand mixer attached with a dough hook.
  • Add the milk and combine. Knead it until it begins to form into a dough. This should only take a couple of minutes.
  • Let it rest for 45 minutes to an hour.
  • While it's resting, make the taco meat.
  • Divide the dough into 12 even sections.
  • Roll each section out into a small circle.
  • Heat the canola oil in a shallow layer over medium heat.
  • Add the dough circle and fry for 30 seconds. Flip it over. Fold it into a taco shape and let that fry for 30 more seconds. Flip it and fry the other side for 30 additional seconds.
  • Take it out of the oil and let it drain on a plate lined with a paper towel or a draining rack.
  • Repeat with all of them.

Taco Meat

  • Brown your taco meat. This should take about 8-10 minutes.
  • Add the tomato puree, salt, pepper, oregano, paprika, onion powder, garlic powder, and chili powder. Combine and let it simmer for 10 minutes.

Assembly

  • Add the taco meat, cheese, and any other toppings you want to the chalupa shell.
  • Serve with salsa, sour cream, or nothing! Whatever will make you enjoy it the most.
