Sugar-Free Gluten-Free Low-Carb Vegan Chocolate Chip Peanut Butter Protein Breakfast Cookies

The only thing better than a cookie is a breakfast cookie because yes, you can have cookies for breakfast. I wanted something that was easy to grab and go when you wake up in the morning and have to head out of the house ASAP because if you’re like me, you wake up with 5-10 minutes to spare. I like to utilize every second I have of those 5 minutes and unfortunately, that usually means that I don’t have time to cook breakfast. These are healthy and cover most food intolerances (sorry peanut allergies.) Make a big batch and have breakfast forever!!!

Sugar-Free Gluten-Free Low-Carb Vegan Chocolate Chip Protein Breakfast Cookies

The only thing better than a cookie is a chocolate chip peanut butter oatmeal cookies you can have for breakfast.
Prep Time 5 minutes
Cook Time 20 minutes
Course Breakfast, Dessert

Ingredients
  

  • 2 ½ bananas ripe
  • cup peanut butter
  • 1 cup oats
  • 1 cup sugar-free, vegan chocolate I use The Good Chocolate
  • ¼ cup pea protein powder I use Arbonne
  • 2 T sugar-free honey linked on Mick's List
  • ¼ t sea salt
  • ¼ t cinnamon

Instructions
 

  • Preheat oven to 350° F.
  • Mash together the bananas and the peanut butter.
  • Add the oats. Combine.
  • Add the chocolate, Arbonne Protein Powder, honey, sea salt, and cinnamon. Combine.
  • Scoop 1 T sized balls onto a baking sheet lined with parchment paper, about 1/2 inch apart.
  • Use your hands to flatten them and shape them into cookies.
  • Bake for 15-17 minutes.
