Earl Grey Tea Lavender Cookies

Most of you are probably already sold but I think I may need to convince you to jump on the train with these flavors. I promise they won’t be as overpowering as you think. The earl grey and lavender are so subtle, that if you’re not looking for them, you may not even find them. You’ll just think that it’s a fresh, light, new way to take on a cookie. On the opposite side of the spectrum, if you are looking for these flavors, you will find them, and you will love them.

Earl Grey Tea Lavender Cookies

The flavors of earl grey tea and lavender are subtle and perfect. A summertime cookie you'll be reaching for over and over again.
Servings 12 cookies

Ingredients
  

  • 2 ¼ cups flour
  • 4 Earl Grey tea bags
  • 1 t culinary lavender
  • ½ t salt
  • ½ t baking powder
  • ¼ t baking soda
  • 1 ¼ cup sugar
  • 2 sticks butter softened
  • 1 egg
  • 1 T vanilla extract

Instructions
 

  • Preheat oven to 350° F.
  • In a food processor or spice grinder, grind down your earl grey tea and culinary lavender until it's a powder.
  • Sift together the flour, earl grey tea, lavender, salt, baking powder, and baking soda.
  • You can do the remainder of the recipe using a stand mixer or by hand.
  • Beat together the sugar and butter for 3 minutes.
  • Add the egg and vanilla and combine.
  • Add the dry ingredient mix ¼ cup at a time until completely combined.
  • Roll the dough into 1-2 tablespoon sized balls and place them about 2 inches apart on a baking sheet lined with parchment paper.
  • Bake for 13 minutes.
