Buffalo Chicken Pizza With A Bleu Cheese Stuffed Crust

Yes, you read that right. The ultimate of ultimate game day meals. Or just any day meals. I imagine making this for those football watching days or maybe when you’re hosting a more relaxed party. But, honestly, this is so good I recommend you eating it whenever you can. The entirety of this pizza can be made all on the same day. The dough doesn’t take that long to rise, so you’ll be enjoying it soon after you start it. While it is a labor of love, the labor isn’t too hard. I basically combined everyone’s favorite things into the world’s best Franken-pizza. You’re welcome!

Buffalo Chicken Pizza With A Bleu Cheese Stuffed Crust

Ingredients
  

Pizza Crust

  • 4 cups flour
  • 1 t salt
  • 2 t yeast
  • 1 ⅔ cup warm water
  • 1 T honey
  • 2 T olive oil
  • 1 package bleu cheese

Buffalo Chicken Dip

  • 2 chicken breasts
  • 4 oz. cream cheese half a brick
  • ½ cup ranch dressing
  • ½ cup hot sauce
  • 1 t pepper
  • 1 t salt
  • 1 cup mozzarella cheese
  • 1 cup cheddar cheese
  • more mozzarella and cheddar cheese for topping

Instructions
 

Pizza Crust

  • Combine the flour, salt, and yeast in either a stand mixer bowl or a large bowl.
  • Turn your stand mixer on and slowly start adding the water. If you're doing it by hand, slowly add the water as you're mixing the dough together with a spoon.
  • Add the honey and olive oil.
  • If the dough is too wet and isn't forming into a dough, add more flour until it does. Alternatively, if it's too dry and crumbly, add more water little by little.
  • Cover your bowl with saran wrap or a tea towl and let it rise for 1-2 hours, or until doubled in size.
  • Grease a cast iron pan.
  • Roll your dough ball out on a floured surface until it's large enough to cover the entirety of your cast iron pan and can hang over the edges comfortably. Press the dough into the corners of your pan so you have a flat surface to work with.
  • Add the bleu cheese to the corners of the pan, or where the crust will be after you fold over the dough to cover the bleu cheese.
  • Lay the dough that is hanging over the edge of the pan over the bleu cheese. Press down the edge into the pizza crust or fold the dough around the cheese, tucking the crust underneat, creating a stuffed crust.

Buffalo Chicken Dip

  • Add the chicken breasts to a large pot and add just enough water to cover the chicken.
  • Bring the water to a boil.
  • Reduce the heat to a simmer and let the chicken cook for 10-15 minutes. This will depend on how big your chicken breasts are.
  • Shred the chicken.
  • In a medium or large pot over low/medium heat, add the cream cheese, ranch, hot sauce, salt, and pepper. Stir until the cream cheese is melted and it's all combined.
  • Reduce heat to low. Add the shredded chicken, mozzarella cheese, and cheddar cheese. Let the cheese melt and cook until all of the ingredients are well combined.

Pizza Assembly

  • Preheat your oven to 500° F.
  • Add the buffalo chicken dip on top of your uncooked pizza crust. Spread it out evenly.
  • Top it with the mozzarella and cheddar cheese.
  • Place the pan with the pizza dough in it over medium/high heat on your stovetop for 3-4 minutes.
  • Transfer to the oven and bake for 20 minutes.
