Dark Chocolate Bundt Cake + Coffee Icing

Whenever anyone comes to the house, the first thing they ask is, “Can you make your dark chocolate bundt cake while you’re here?” And because I’m a great friend, I always do. It’s pretty easy, I usually always have the ingredients, and it’s so good I’m always ready to have a slice myself. I may have been a little extra in decorating this one, but hey, it’s the holiday season! It’s okay to be extra. You can omit the little snow-covered trees and leave it as just a snow-covered cake. No matter what it looks like, everyone will love it.

Dark Chocolate Bundt Cake + Coffee Icing

The sweetness mixed with the dark chocolate and coffee makes this the perfect meal ender or day starter.

Ingredients
  

Dark Chocolate Cake

  • 2 cups sugar
  • 2 cups flour
  • ½ cup dark cocoa powder
  • 2 t baking soda
  • 1 t baking powder
  • 1 t sea salt
  • 3 eggs
  • ½ cup coconut oil melted
  • 1 ¾ milk

Coffee Icing

  • 1 cup powdered sugar
  • 3-4 T coffee

Instructions
 

Dark Chocolate Cake

  • Preheat the oven to 350° F.
  • Combine sugar, flour, dark cocoa powder, baking soda, baking powder, and sea salt.
  • Add the eggs, melted coconut oil, and milk. Combine.
  • Pour into a greased and floured bundt pan. Bake for 40 minutes.
  • Let cool.

Coffee Icing

  • Combine the powdered sugar and coffee. If too thin, add more powdered sugar. If too thick, add more coffee.
  • Drizzle it on top of the cooled bundt cake.
  • Dust or sift the top with powdered sugar.
