Roasted Pepper Shrimp Pasta

Some days, I look in my fridge, I want pasta, but I don’t want pasta. I mean, I ALWAYS want pasta. But, I don’t want *pasta* pasta, if that makes sense. Okay, scratch all of that. I know it doesn’t make sense. There’s something about using roasted red peppers that gives me that not pasta pasta feel. It’s a far take from a marinara/tomato-based sauce and a white cream sauce and it’s perfect for those days you’re a little tired of Italian food and want to put a fun, extra spin on it. This is spicy, creamy, and so, so good. The shrimp is optional, but trust me, it goes great with this sauce. I hope you enjoy her as I do.

Roasted Pepper Shrimp Pasta

This spicy, creamy roasted pepper sauce is a modern take on Italian food that will satiate all of your pasta needs.
Prep Time 25 minutes

Ingredients
  

  • 1 lb. pasta noodles Make sure to reserve 1 cup of pasta water!
  • ¼ cup olive oil
  • 3 bell peppers Color doesn't matter! I use red, orange, and yellow, but you can use any mix of those you'd like.
  • ½ T rosemary
  • 1 t thyme
  • 1 t oregano
  • 1 t onion powder
  • 1 t garlic powder
  • ½ t salt
  • ½ t pepper
  • ¼ cup parmesan cheese
  • ½-1 lb. shrimp This is optional and all based on how much shrimp you want in your pasta.

Instructions
 

  • Cook your pasta noodles. Make sure to reserve 1 cup of pasta water when the noodles are done. Make the sauce while the noodles are cooking!
  • Dice the bell peppers. Make sure that it's clean of all seeds.
  • Heat the olive oil in a large pan over medium heat.
  • Add the diced peppers, rosemary, thyme, oregano, onion powder, garlic powder, salt, and pepper.
  • Cook for 15 minutes, or until the peppers are a little bit charred and caramelized.
  • Add everything in the pan to a food processor or blender. Puree until smooth.
  • Add the sauce back into the pan over low/medium heat.
  • Add the parmesan cheese and stir until it's well combined.
  • Add the reserved pasta water about ¼ cup at a time until the sauce's consistency is smooth and glossy.
  • Make sure the shrimp is deveined. You can either add it to the sauce raw and cook it in the sauce for a few minutes, or saute it in a separate pan for 2-3 minutes beforehand and add it to the pasta when plating.
  • Add the noodles to the sauce and let it all cook together for 1-2 minutes.
